Lemon Garlic Soba Noodles with Kale & AvocadoJuly 9th, 2014 0 Comments

I’ve been on a kale kick for the past week (plus I have so much of it from the store) so I thought of this fun way to throw it together with some delicious ingredients for a simple, yet satisfying, weeknight meal.

Serves: 2


  • 1 tsp olive oil
  • 1 large garlic clove, chopped
  • 2 heaping handfuls of kale, cut into large pieces
  • 1 ripe avocado, sliced
  • 1 green onion, diced (white and green parts separated)
  • 1 lemon (juice and zest)
  • 1 bundle of buckwheat soba noodles (enough for 2 servings)



Cook soba noodles as directed on package. Drain, rinse with cold water, toss with a little olive oil and set aside.

Heat garlic and white bits of the green onion in olive oil over medium heat. Once hot, add kale and cook until leaves begin to wilt slightly. Remove from heat.

Pour the juice of one lemon over the noodles and toss to coat evenly. Add kale mixture to the noddles and serve, with avocado, green onion and lemon zest on top!
